Latent heat (Joules/kg)

  • Of fusion: The amount of energy required to change a unit mass of  a substence from solid to liquid
  • Of vaporisation: The amount of energy required to change a unit mass of a substance from liquid to gas

Thermometer only gives us an idea of the total potential energy and kinetic energy of the molecules in an object. It does not tell us how much heat a particular object absorbs or gives off.
